The story of Santa Gertrudis

Some ranches are born with vast stretches of land and generations of wealth behind them. Santa Gertrudis was born of something far more valuable: work, perseverance and the love of two people.

More than fifty years ago, Don Gervasio and his wife Gertrudis began with very little. They inherited no great estate and no large herd. All they had was a small plot of land, a few head of cattle, an unbreakable will, and the dream of building a future for their family.

Every day began before the sun came up. While Don Gervasio walked the pastures, mended fences and tended the cattle, Gertrudis kept the books, accounted for every cent, and found a way to make sure the workers’ table never lacked food and the house never lacked hope.

Year after year, they reinvested every profit. They bought more land, improved the pasture, chose their cattle with care, and learned that quality is never an accident: it comes from patience, discipline and respect for the animals. What began as a handful of cows became, over the decades, one of the most respected herds in the region.

But for Don Gervasio the real inheritance was never the hectares or the cattle. He always said the greatest achievement of his life had been building all of it beside Gertrudis.

When she passed, after a lifetime shared together, Don Gervasio made a decision he never had to think about for long. The ranch would carry forever the name of the woman who had been his companion, his partner, and the heart of that dream.

That is how Hacienda Santa Gertrudis was born.

Tradition, and proof

As the years went by, tradition met innovation. Without giving up the values the ranch was built on, Santa Gertrudis brought in technology to offer something very few can guarantee: complete traceability. Every cut is vacuum sealed under strict quality control and carries a unique QR code that opens the full history of that piece of meat. Scanning it shows:

  • The exact location of the ranch where the animal was raised
  • The animal’s individual identifier — or its name, where the farm registers one
  • Breed, age and sex
  • Feed and husbandry system
  • Animal welfare indicators
  • Dates of birth, handling, processing and packing
  • Weight, yield and grade of the cut
  • Health controls and veterinary inspections
  • Cold-chain records through processing and transport
  • Applicable quality certifications

Alongside this data the system shows statistical and demographic information, so a customer can understand where the cut came from, what the animal was like, and the standards it was raised under. Because at Santa Gertrudis we believe quality should not only be tasted in a good cut — it should be possible to verify it.
